Melting chocolate properly isn't easy, whether for pralines, cakes, tortes, or sauces. It quickly becomes gray and patchy. Städter's tempering device prevents this from happening.
Chocolate is a true diva. It doesn't like it too hot and doesn't like to be heated too quickly. White chocolate doesn't need to be as hot as dark chocolate. And then it also needs to be cooled and reheated just to get that beautiful shine.
The tempering device helps you with this complicated process.
First, the chocolate or couverture must be chopped and placed in the removable container. Then, turn on the device and set the correct temperature.
Once the chocolate has melted, it must be cooled again to achieve its beautiful shine. Once this has been done, the chocolate is brought to the correct processing temperature. This is

Whole milk chocolate coating 30-31°C
Dark chocolate coating 31-32°C.
Only at these temperatures do sugar, cocoa butter and cocoa mass combine optimally.
